Microgreens 101

What are microgreens?

Microgreens are young vegetable greens harvested after the first true leaves appear — usually one to three weeks after sowing. They are eaten as a fresh garnish or a handful mixed into everyday food.

Microgreens vs sprouts

Sprouts are germinated seeds eaten root, seed and shoot, often grown in water. Microgreens are grown in a medium, cut above the root, and harvested later. They have more leaf, more flavour, and a different texture.

How microgreens are grown

Seed is sown densely on a growing medium, germinated, then grown under light until the stems are a few inches tall. Little Greens plans trays around upcoming apartment deliveries.

Why people add them to food

They add flavour, colour and a concentrated serving of plant nutrients without needing a new recipe. A handful on dosa, eggs or dal is enough.

How to wash microgreens

Rinse gently in cool water just before eating. Drain well. Avoid soaking for long — tender stems bruise easily.

How to store microgreens

Keep them refrigerated in their pack or a loosely covered box lined with a dry cloth. Use within a few days of delivery for the best texture.

How to use microgreens

Add them at the end. Heat wilts them quickly. Scatter over hot food, fold into curd, or pile onto a sandwich.

Ideas for Indian meals

Try broccoli greens on masala dosa, radish on a cheese sandwich, fenugreek in raita, pea shoots on lemon rice, and sunflower shoots in a breakfast bowl.
